Pomegranate Dressing

Usually I prefer a simple lemon juice and olive oil dressing for my salads, but here’s where I make an exception—pomegranate dressing! If you’ve never had pomegranate molasses, ground sumac, and dried mint before, this is the time to try it.

Pomegranate molasses is dark, thick, and syrupy with a tangy concentrated flavor that gives a jot of acidity and slight sweetness to the dressing. Ground Sumac is a tart, citrusy-fruity, Middle Eastern spice that comes from a reddish-purple berry found on wild bushes. These flavors together with the addition of coolness of the mint are an unforgettable combination.

Pomegranate Dressing

4-6 servings
Ingredients
2 tablespoon pomegranate molasses
2 cloves garlic, mashed to a paste
½ teaspoon salt
1 tablespoon ground sumac
½ teaspoon mint dried, optional
½ cup olive oil
¼ cup lemon juice
Method
Whisk ingredients together in a small bowl or place in a glass jar with a lid and shake until emulsified.
Dressing can be made in advance and kept in the refrigerator for a couple of days. Because olive oil solidifies when chilled, remove it from the refrigerator well before you want to use it.

Notes

Pomegranate molasses may be found online if you have trouble finding it at your local grocery store.
